Oooohhh, the time is flying! We have autumn already, but a late summer has squeezed into the days, coming back from where it had seemed to have disappeared.

Today I finally managed to tick off one of the points from my to-do-list – as a little memento of my summer holidays which I spent with a friend in France this year. On this three-week road trip, I was looking for one of my favorite French dishes, in every restaurant we went to. It nearly took until the very last day until I finally could order “galettes de sarrasin”, the Breton pancakes made of buckwheat flour with a savory filling. They are just too good, even if simply made. But maybe because they are very simply made.

I tried two versions, one with spinach and greek cheese, the other one with egg and melted Butterkäse cheese (could not find a translation for that – it is a smooth but still solid cheese, so rather Gouda-type than creamy).

The base – the crêpe as such – had a little room for improvement (needs slightly more liquid in the batter to get a thinner pancake), but the spinach / greek cheese filling was fabulous. The egg-filled one needs some herbs maybe, or tomato to go with, to make it more fresh and light. But overall, I had a tasty meal which reminded me of Troyes, a 4th century jewel full of timbered houses, narrow streets and relaxed people who know  the savoir-vivre, the good life.
